Appetizer For 4 people
2 tablespoons of apple cider vinegar
1 tablespoon of lemon juice
4 tablespoons of olive oil
½ bunch of chives

How to proceed
Preparation: approx. 20 minutes
Finely chop the shallot and mix it with the vinegar, lemon juice and oil. Finely chop the chives and add it to the vinaigrette. Season with salt and pepper.
Clean the oysters, rinse them well and grab them one after the other with the flat valve upwards and the concave one towards the palm of your hand. To protect yourself from injury, we recommend that you use a cloth or special glove. Insert the tip of the knife between the two valves and sever the muscle that holds them together. Slide the blade all around the oyster along the hinge. By levering, lift the upper flat valve and remove it without overturning the lower shell, which contains the oyster liquid.
