Beetroot and orange salad

Ingredients

6 tablespoons of sunflower seeds

1 kg of steamed beets

4 oranges

½ onion

5 tablespoons of white wine vinegar

8 tablespoons of sunflower oil

salt

pepper

How to proceed

Preparation: approx. 20 minutes

Toast the sunflower seeds in a pan without adding fat. Let it cool down. Peel the beets under cold water. Grate them in a bowl with the rösti grater and set aside. Finely grate some orange zest. Squeeze a quarter of the oranges. Finely chop the onion. Add it to the zest and orange juice with the vinegar and oil. Season the vinaigrette with salt and pepper. Peel the remaining oranges raw, also removing the white skin. Cut the citrus fruits into cubes, add them to the beets set aside and serve.
